I was hungry, but not in the mood to cook properly.
You know those days when you want something warm, but the idea of chopping, frying, and cleaning feels annoying? That was one of those days. I didn’t want junk food either. Just something simple that would actually feel like a meal.
This soup started as that kind of food. Nothing special, just something to get me through the evening. I’ve made it many times since.

Ingredients You’ll Need

No fancy ingredients. All of these are usually available in your kitchen.
- Broccoli (Obviously)
- Potato (Prefer Yellow Potato because you need not to peel it)
- Onion
- Garlic
- Water
- Salt
- Plant based milk (I use coconut milk but you can use any plant based milk)
- Corn flour
- Vegan butter
How To Make Broccoli Soup
1-2 potato and cut it in small pieces
1 onion chopped
1 or half clove of garlic
Put all this inside a pressure cooker and add 2 glass of water
add 1-2 teaspoon salt
Boil this for 10 minutes
Then add 200 – 300g of Broccoli florets and let it cook another 5-7 minutes also if needed add some water
Then check on vegetables if they are properly cooked and leave it for 10-15 minutes aside
Now let’s make the white sauce
take a saucepan add 1 cup of milk
1 tablespoon of cornflour
1 teaspoon of butter
now turn on the flame and keep stirring continuously because as the milk thickens it’s going to start sticking to the saucepan
Do it for 5 minutes and now you are almost done
Take the cooked vegetables grind then and make it a smooth puree using hand blender and add the white sauce on to it
And your healthy tasty creamy Broccoli Soup is ready.
