I used to ignore cabbage.

Until one rainy evening, I made this simple cabbage soup.
One spoon in – and I was surprised.
It’s light, but filling.

Ingredients
- Cabbage (Obviously)
- Olive Oil
- Onion
- Carrot
- Garlic
- Tomatoes
- Celery Stalks
- Dried Basil
- Salt
- Lemon Juice
- Vegetable Broth
- Dried Oregano
- Black Pepper
- Parsley
Preparation Process

Take 2 celery stalks and cut them into small pieces
Take 1-2 medium size carrot and cut them into small pieces
Take 1-2 medium size onion and chop them
Put them in a bowl
Take ½ medium size cabbage and chop them
Take little fresh parsley like a quarter cup
Put them in another bowl, don’t mix with previous ingredients
Stovetop Cooking
Take a pot on medium-high heat and put 3-5 tablespoon olive oil
Dump the ingredients from the 1st bowl to it (Onion, Carrot, Celery stacks)
Cook the vegetables for 5-7 minutes and then add 2-3 minced garlic cloves
Add few spices like half a teaspoon dried basis, salt
Stir for 2-3 minutes then add the cabbage and again stir it for another 5-6 minutes
Then Pour 4 cups of vegetable broth and 1 diced tomato and give it a stir (If needed add little water)
Let it cook for another 10 minutes (Uncovered)
Now your cabbage soup is ready
Add a quarter cup of chopped parsley, 1-2 tablespoon of lemon juice, little blacked pepper
Give it a final stir and taste your soup
