I used to be a junk food addict
I always avoided Carrot cakes
Why?
Because i used to think vegetables are not tasty so carrot cake will not be tasty
Until 1 day i found this recipe which open my eyes.
Wanted to know about the recipe and taste something delicious then read below.
Ingredients
- Carrot (Obviously)
- Apple Puree
- Olive Oil
- Apple Cider Vinegar
- Agave Syrup
- Oat Flour
- Salt
- Cinnamon
- Baking Soda
- Plant Based Spread
Preparation Process

Let’s start with peeling 250g or 4-5 medium side carrots
Add the grated carrot in a big bowl
Add 1/2 cup of apple puree
Add 1/4 cup of olive oil
Add 1 tablespoon of apple cider vinegar
Add 1/3 cup of agave syrup
Mix all the ingredients properly for 5-10 minutes
Add 1 & 1/2 cup oat flour
Add little salt like a pinch
Add 1 tablespoon of cinnamon
Add 1/2 tablespoon of baking soda
Mix all the ingredients properly
Baking Process
Take a parchment paper and crumple it to fit inside the mould and grease the sides of the mould with oil
Transfer the mould into the mixture and spread evenly
Bake it at 180 degree C for approximately 45-50 minutes
Now let it cool down for few minutes and unmould it
Take 150g plant based spread and 2 tablespoon of agave syrup
Combine both the ingredients and mix them properly
Evenly spread on top of the cake and take your first bite

Final Thoughts
This cake proved me wrong.
What I once avoided turned out to be one of the most delicious desserts I’ve ever made. It’s soft, moist, perfectly sweet, and doesn’t even taste like you’re eating vegetables.
Sometimes the things we avoid surprise us the most.
Give it a try and you might just become a carrot cake lover too.
