Easy Vegan African Peanut Soup (Creamy & Comforting)

Don’t worry it’s not the traditional recipe

It’s African Peanut soup

The best part is you don’t need anything fancy, every ingredients available in your kitchen.

Ingredients

  1. Peanuts Butter (Make sure it do not contain any sugar)
  2. Canola Oil
  3. Onion
  4. Ginger
  5. Tomato Paste
  6. Sweet Potato
  7. Salt
  8. Black Pepper
  9. Cayenne Pepper (optional but highly recomended)
  10. Vegetable Broth
  11. Baby Spinach

Preparation Process

Take a pot add 1 table spoon of canola oil

Take 2 Large size onion and chop them and add them in the pot

Add 1 thumb ginger

Stir them for few minutes until it became translucent and golden

Add 3 ounces of tomato paste

Add 1-2 medium size of sweet potato after peel them off and chop them in small pieces

Add some salt and black pepper and a little bit of cayenne pepper

If you want you can add some chili pepper as well for a spicy flavor

Stir them for for few minutes then add 6 cups of vegetable broth

Simmer it for 20 minutes with the lid on

Now add 1 cup of peanut butter crunchy/creamy (make sure it don’t contain any sugar because it’ll impact the taste)

Stir them and mix the peanut butter properly until you get the deep vibrant orange texture

Add little bit of tiny spinach

Stir them for few minutes until the spinach is wilted

And now its ready to be served.

FAQs

Can I use tomatoes if I don’t have tomato paste?

Yes you can use fresh tomatoes but i prefer tomato paste for the thickness.

Can I use groundnuts instead of peanut butter?

Yes, you can. No problem at all. It will taste almost the same as this one.

I don’t like spinach so can i skip it?

Yes, you can skip it. It’s optional, but you can also try kale (cabbage leaves) if you like.
