Hey Vegans.
You love Marshmallow but afraid to eat it.
Why?
Because it have gelatin powder (contain animal collagen).
No worries.
I will share you a recipe without gelatin purely vegan with only 5 ingredients.
Ingredients

This recipe will make about 12 – 18 small square marshmallows
- Corn flour 1½ tablespoon
- Sugar 1 Cup
- Agar-agar 2 tablespoon
- Water ⅓ cup
- Vanilla essence (few drops as per you need)
- Pink food color
This are the 5 ingredients and the Pink food color is completely optional. If you don’t like food color you can completely avoid it.
Preparation Process
First mix sugar and corn flour and make them powder.
Grab your baking tray grease with oil for few minutes then lightly coat it with the icing sugar and leave it aside for now.
Take a bowl add 2 tablespoon of Agar-agar, Water ⅓ cup mix them and wait until it soaked.
Then take a small pan and pour in 1 cup of sugar and ¼ cup of water.
Place it over medium heat and let it slowly melt then reduce the heat and pour the mixture and cook it for 2 minutes.
Move the melted sugar into a bowl.
Blend it in low speed for 5 minutes.
If it don’t became foamy white texture then blend it for few more minutes.
Add few drops of Vanilla essence and again blend it for 1 minute in medium speed.
Grab the baking tray which we grease with oil previously and pour half the mixture on it and spread it evenly with a spoon.
Add few drops of pink food color to the half mixture and again blend it for 1.5 minutes in low speed.
You’ll get a pinkish color. Pour it in the tray.
It would be little sticky so coat with some icing sugar on it and then put in on freezer for 2 hours.
Finally its done. You can cut it in size as per you want.
Final Notes

Can I make this recipe without a blender?
Yes you can do it with a spoon but it will take more time and efforts.
Why do the marshmallows stick to the knife while cutting?
This is completely normal. Marshmallows are naturally sticky. To avoid this, lightly dust your knife with icing sugar before cutting.
