But don’t worry, i will share Vegan Potato Leek Soup – Dairy-free and Super Easy to cook.
Ingredients

- Leek (Obviously)
- Yellow Potato (It’s a soup so i prefer peeled potato)
- Olive Oil
- Garlic
- Bay leaf
- Thyme
- Kosher Salt
- Vegetable Broth
- Chives
- Black Pepper
Preparation Process
Take 3 large leeks slice off the green leaves and use the lighter
Slice the lighter portion in small and wash them properly in a colander
Take 3-5 Potatoes peel them of and place them in a bowl
Heat 2 tablespoon of olive oil in a large pot over medium heat
Add the leeks and 2 cloves of chopped garlic stir that together and saute them for 8-10 minutes
Add the chopped potatoes
Add 1-2 Bay leaf and 2-3 sprigs of Thyme
Add 1 teaspoon of Kocher salt (You can use normal salt also)
Add 4 cups of Vegetable Broth
Now reduce the heat to sim and cover it and boil it for 15-20 minutes
After that remove the led stir the soup and make sure potatoes cooked properly (Remove the bay leaf and Thyme if you don’t like it)
You are almost done
Use a good blender and make it chunky or smooth as you like
I like smooth soup so after blend you see a fairly thick texture
If you like thick soup then its done or if you prefer thinner then add 1-2 cup of vegetable broth for watery soup texture
Serving

Your soup is ready!
Pour it into a bowl according to your appetite, drizzle a little olive oil on top, and garnish with thinly sliced chives and freshly cracked black pepper.
