Homemade French Onion Soup (No Beef)

Ingredients

  1. Onion (Obviously)
  2. Olive Oil
  3. Sugar
  4. Flour
  5. White Wine
  6. Vegetable Broth
  7. Thyme (Dried or Fresh)
  8. Bay Leaf
  9. Salt
  10. Black Pepper
  11. Bread

Preparation Process

Take 600g of onions and slice them thinly.

Heat a pan over medium heat, add a little olive oil, then add the sliced onions.

Add 1 tablespoon of sugar until the onions are slightly golden brown and caramelized.

Add 1 tablespoon of flour and fry it for another 2 minutes.

Add 100ml white wine and stir it for 3 minutes.

Add 5 cup vegetable broth and stir it for 2 minutes.

Add 1 tablespoon of thyme (fresh or dried any).

Add 1-2 bay leaf (If you don’t like bay leaf then don’t add it).

Allow the soup to simmer gently for 25 minutes.

Add little salt and pepper as you like.

If you want add some bread as well.

Now your tasty and healthy soup is ready.

Can I use red onions instead of yellow?

Sure! Red onions are a bit sweeter and make the soup a lovely color. Honestly, I’ve tried both and either way it’s tasty. With red onions you can skip sugar if needed.

Honestly, not at all. I usually add it for a little extra depth, but if you don’t have any or don’t want to use alcohol, just pour in a bit more veggie broth or a splash of apple cider vinegar. It still tastes amazing.
